INVENTORY   在庫(リスト)、棚卸資産

Explanation

A store's inventory is all the goods it currently has in stock, a list of these goods, or their total value.

To take inventory is to make such a list.
inventory とは、ある店舗が現在在庫として持っている全ての商品、そうした商品の一覧、または、その価値の総額、という意味です。

take inventory とは、そのような在庫の一覧を作る、つまり、棚卸しをする、という意味です。
